Guantánamo.- Bakery 01_2 in El Salvador has adapted to a fuel shortage by relying solely on its wood-fired oven for bread production. This shift, while traditional, has significantly increased the physical demands on the staff.
Manager Lester Gutiérrez Leyva reported that the bakery produces 8,320 loaves daily, but this achievement comes at a cost, as bakers now mix dough by hand, replacing machinery with sheer physical effort to maintain output.
The heart of the bakery lies at the oven, where baker Félix Ramírez Hernández faces extreme heat and potential hazards daily. His experience has taught him the importance of vigilance in monitoring the baking process to avoid accidents that could threaten both production and his safety.
